I created this dish last year for a gala dinner in Nepal. They were looking for something uncommon for the region but with a Nepali flavor twist, so I decided to season the octopus with traditional Nepali spices and top it with a foam made from Nepali tea.
Mixing cultures and flavors is my signature style.
